Friday evening I whipped up one of my all time favorite dishes: Pad Thai . Attending the University of Washington in Seattle meant that a fabulous and inexpensive Thai restaurant was around virtually every corner. My Pad Thai addiction was easily satisfied. When we moved away I learned to make this delicious Thai noodle dish, but it always seemed to be missing something. Some special Thai secret ingredient maybe? Possibly something the chefs had their families send over from Thailand? I figured I would never find out. Then one fortuitous day I came across Pim's Pad Thai For Beginners tutorial. I managed to find some excellent places to hide out from the little beggars tonight. I did go to the library, but only long enough to get a library card. I’d been meaning to do that since I moved to this town and, since I had time, I finally did it.
