Friday evening I whipped up one of my all time favorite dishes: Pad Thai .
Attending the University of Washington in Seattle meant that a fabulous and inexpensive Thai restaurant was around virtually every corner. My Pad Thai addiction was easily satisfied.
When we moved away I learned to make this delicious Thai noodle dish, but it always seemed to be missing something. Some special Thai secret ingredient maybe? Possibly something the chefs had their families send over from Thailand?
I figured I would never find out.
Then one fortuitous day I came across Pim's Pad Thai For Beginners tutorial. I gathered the ingredients together and followed her recipe. There it was! The perfect Pad Thai of my Seattle years.
Pim , I cannot thank you enough!

While most people associate comfort foods with blandness, Pad Thai makes it into the comfort food pantheon with its incredible balance of sweet and tangy, crunchy and slippery. As recognizable to Americans as Chinese moo-shu pork, Pad Thai consists of stir-fried rice noodles, fish sauce, tamarind, peanuts, egg, bean curd and cilantro. Sura’s sprightly version, with little cubes of smoked tofu, comes in a seemingly bottomless black bowl and does not disappoint, especially for $5 during the new... more
The hideouts From: belessboring.stringcheese.net Post Date: 2008-10-31 01:19:05
I managed to find some excellent places to hide out from the little beggars tonight. I did go to the library, but only long enough to get a library card. I’d been meaning to do that since I moved to this town and, since I had time, I finally did it. After that, I went to my favorite Thai restaurant and gorged on yummy Satay, won ton soup, Pad Thai, and a whole pot of Thai tea. From there it was off to a nearby tavern to meet up with a colleague, drink some beer, and listen to anothe... more
This is a great salad to serve at a sports party or for watching Monday night football. It is so easy and reminds me of the buffalo wings at a restaurant, but not as heavy. Plus the carrots and celery give the salad a great crunch.
In a large salad bowl, combine:
2 hearts of romaine lettuce, chopped or one bag of romaine salad greens
1 cup shredded carrots
3 ribs of celery, chopped
In a small bowl combine:
1/2 cup ranch dressing
1/2 blue cheese crumbles
Mix well and pour onto ... more
Filed under: Food and Nutrition For some people, the word salad equals healthy. Unfortunately, that’s not always the case. Or McDonald’s Premium Southwest Chicken Salad , which has 430 calories and 20 grams of fat, and that’s before you pour on the dressing. But salad slip-ups aren’t limited to fast food or other restaurants. People make plenty of not-so-healthy choic... more

This is mainly a reminder for myself. An aunt gave me a large basket filled with limes from her garden, something like 200 pieces. I'm really not in an experimental mood at the moment since I am neck-deep in work....
